When you need a quick lunch or snack to go, there’s nothing like the satisfying combination of vegan curd and rice!
Vegan Curd Rice
Ingredients
- 1 bowl of steamed rice
- 1/2 cup vegan curd (coconut or cashew curd works best)
- 1 cup shredded or chopped vegetables
- 1 tablespoon coconut oil or any neutral oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1–2 green chilies, finely chopped
- 1 tablespoon ginger, finely grated
- A handful of curry leaves
- 2 tablespoons peanuts or cashews (optional, for crunch)
- A pinch of asafoetida (thing)
Instructions
- Mix rice, curd, and vegetables in a bowl.
- Heat coconut oil in a small pan and fry mustard seeds, cumin seeds, green chilies, grated ginger, curry leaves, and asafoetida. Sauté for a minute.
- Pour the tempering over the rice mixture and mix gently to combine.
