7 Must-Try Recipes for a Compassionate Eid ul-Fitr

Eid ul-Fitr is a time of gratitude, community, and celebration. Marking the end of Ramadan, the festival brings families together over tables filled with festive dishes, sweets, and shared joy. This year, celebrate with delicious recipes that are rooted in tradition and made with care for all beings.

Sheer Khurma — A Festive Favorite

Ingredients

  • 1/4 cup vermicelli (seviyan)
  • 3 cups cashew or almond milk
  • 10–12 dates (chopped)
  • 2 tbsp chopped nuts (almonds, cashews, pistachios)
  • 1 tbsp raisins
  • 1/2 tsp cardamom powder
  • 1 tbsp coconut oil

Method

  1. Heat coconut oil in a pan. Fry vermicelli until golden.
  2. Add chopped dates, raisins, and nuts. Sauté for 1–2 minutes.
  3. Pour in plant milk and simmer on low for 10–12 minutes.
  4. Add cardamom powder and stir well.
  5. Serve warm or chilled.

Biryani — Aromatic and Flavorful

Ingredients

  • 1 cup basmati rice (soaked for 30 minutes)
  • 1 cup mixed vegetables (carrot, beans, peas, potatoes)
  • 1 onion (sliced)
  • 1 tomato (chopped)
  • 1/2 cup coconut or cashew curd
  • 1/4 cup mint leaves
  • 1/4 cup coriander leaves
  • 1 tsp ginger-garlic paste
  • Whole spices: 1 bay leaf, 2 cloves, 2 cardamom pods, 1-inch cinnamon
  • 1/2 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 2 tbsp oil
  • Salt to taste

Method

  1. Cook basmati rice until 90% done. Drain and set aside.
  2. In a pan, heat oil and add whole spices. Add sliced onions and sauté until golden.
  3. Add ginger-garlic paste, tomatoes, and spices. Cook until soft.
  4. Stir in chopped vegetables and cook until slightly tender.
  5. Add curd, mint, and coriander. Mix well.
  6. Layer rice over the vegetable mixture. Cover and cook on low heat for 10–12 minutes.

Sevaiyan Kheer — Delicate and Comforting

Ingredients

  • 1/2 cup fine vermicelli
  • 2 cups cashew or almond milk
  • 3–4 tbsp sugar or jaggery
  • 1/2 tsp cardamom powder
  • 2 tbsp chopped nuts
  • 1 tbsp raisins
  • 1 tbsp coconut oil

Method

  1. Heat coconut oil and roast vermicelli until light golden.
  2. Add plant milk and bring to a boil.
  3. Lower the heat and cook until vermicelli is soft.
  4. Add sugar or jaggery, cardamom powder, and mix well.
  5. Garnish with nuts and raisins.

Kebabs — Crispy Outside, Tender Inside

Ingredients

  • 1 cup boiled and mashed potatoes
  • 1/2 cup boiled chana dal or cooked soy granules
  • 1/4 cup chopped onions
  • 1 tsp ginger-garlic paste
  • 1 tsp garam masala
  • 1/2 tsp chili powder
  • 2 tbsp chopped coriander
  • Salt to taste
  • Oil for shallow frying

Method

  1. Mix all ingredients in a bowl and shape into round or oval kebabs.
  2. Heat oil in a pan and shallow fry until golden on both sides.

Naan — Soft, Fluffy, and Dairy-Free

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp active dry yeast
  • 1/2 cup lukewarm water
  • 1/4 cup cashew curd
  • 1 tbsp oil
  • 1/2 tsp salt

Method

  1. Dissolve sugar and yeast in lukewarm water. Let it activate for 10 minutes.
  2. Add flour, salt, curd, and oil. Knead into a soft dough. Let it rise for 1–2 hours.
  3. Divide dough into small balls, roll into ovals, and cook on a hot skillet or tandoor until bubbles appear.
  4. Flip and cook the other side. Brush with oil before serving.

Shami Cutlets — Flavor-Packed and Protein-Rich

Ingredients

  • 1 cup boiled kala chana or brown chickpeas
  • 1/2 boiled potato
  • 1/2 tsp garam masala
  • 1/2 tsp amchur powder
  • 1 green chili (chopped)
  • 1/2 inch ginger (grated)
  • 2 tbsp chopped coriander
  • Salt to taste
  • Oil for frying

Method

  1. Blend chickpeas and potato to a coarse mix.
  2. Add spices, herbs, and mix well.
  3. Shape into small discs and shallow fry till crisp.
